Winter once more

Dear Bloggy Friends

A one day break (i.e. weather from the North) and now we have another sub-Antarctic blast. Gale force winds and rain and sleet in Wellington. Snow in other places. Just the way to end the Spring School Holidays!

I kept our wee home snuggly by making "No Knead Bread" There are heaps of recipes and instructions for this on the world wide webby place. Mine used 3 cups of wheat flour with 1/4 teaspoon of dried "instant" yeast. About 18 hours after the first mix I rearranged it as the recipe/method said. Two hours later baked it in my cast iron Dutch Oven within my oven.

Is the best bread I've ever made. A moist yet incredibly light inner and a glorious crust. Completely Mickle "dodgy innards - most of the large intestine removed 11 years ago" friendly. And Zebbycat doesn't eat bread.

Despite the wintery springtime weather I am in such a happy place - knowing that I have this bread there for breakfast, and that I can easily make more of it soon. Super special thanks to my Dear Dad and Dear Mum for the gift of the cast iron dutch oven.

I thought you were getting into springtime "down there". What's with the snow?!?!?!?

Love the sound of your bread. I have a cast iron pot - maybe I should try some....Or not....

Dear Mary - when you are into the super cold times do try this. I'll email the recipe to you. It mostly involves time - lots of time when the baker does absolutley nothing to the dough. Can even forget it for many hours, like I had until about 4.30pm.

No snow here in Wellington, but heaps in the South Island and the middle of the North Island. Rain has stopped here but the wind is wild and forcefully stroppy. Much care and love to you and John, xxx Mickle and Zebbycat - we provide warm snuggles for each other!!!!

Darling Pilgrim - do enjoy the warmth. 27 is about the top level of my heat tolerance. Mickle doesn't do hot weather very well. And do continue to enjoy your holiday on that spanish island - I'll just drool over the food you're enjoying. Sending super care and love, Michelle xxx

I can't believe you're having a winter relapse. Thor feels Zebbycat's pain.

I've never tried a no knead bread. Put that on my "to do" list! I like things I can ignore without consequence.

Good morning Michelle, Its a beautiful day here today, not a cloud to be seen, but more cold weather forecast for next week.
The bread sounds good, perhaps this is what I need. I have given up baking bread, since my THR op. as the kneading makes my back ache dreadfully. Next week I'm off to the Spinal Clinic to see what can be done. Hope it doesn't involve another op.

It's so cool to hear you reference "antarctic" blasts. Up here in the northern hemisphere, we lament "arctic" blasts! Your bread sounds great, especially cook in that cast iron. Would love to hear what you create in your new cast iron dutch oven.

I have always enjoyed those late blasts of winter for the chance to stay snug inside. Though it can be a bit of a bummer when you're ready for warmth! That bread sounds good.

I keep reading about everyone making this bread but I've yet to try it. It seems to work well for everyone but I still put it off. Maybe this winter! Hope you weather warms up soon. We have months of snow ahead of us!

Lucky you having a cast iron Dutch oven.

It must be tough only being able to eat some things rather than everything (like me).

I thought when we had our winter, that you had your summer. Now I am really muddled up!
Is all this through global warming then? Are we all going to end up with the same weather no matter where we live? LOL!

You never told me how the bread came out - only that you were making it.
